Just my opinion, if it were me with the cow breeds you have I would lean heavily towards an Angus. I say that based on you have some registered Angus and some red Angus cows, those cows should have fairly uniform calves and you could register the calves from the registered cows or sell them as commercial with the others. I have had a few Angus X Gerts and really like those.
You put some emphasis on big. If so I'd lean toward using the Simmental for Heterosis.. We want big cows big calves thick wide big rear ends. Potential hard calving Do you think solid mouth calves would have a hard time with the delivering the Simmentals calves?
